Easy Sweet Caramelized Onion & Mushrooms

What is your must have for summer meals? A second to fruit & veggie burgers for me would be sweet caramelized onions. I use them as a side along with grilled veggies or I throw them on burgers, wraps and tacos to jazz up any recipe. This Easy Sweet Caramelized Onion & Mushroom recipe has enough flavor to enjoy at your next BBQ or all year round. The best part is that this recipe doesn’t require much resources. It’s also very affordable. As a family of five, anything that is affordable, quick and full of flavor is a win win!

There are 2 reasons I prefer to use sweet Vidalia onions for this recipe versus other onion varieties:

  1. Vidalia onions are extremely low in pyruvic acid, making them among the mildest of onions.
  2. Vidalia onions are in season from April to August making it the perfect addition to spring & summer dishes!IMG_7085IMG_7084

I chose to add my sweet caramelized onion and mushrooms to a black bean wrap. This wrap was also loaded with avocado, Japanese sweet potato & enclosed with a gluten-free cassava wrap. My wrap was paired with grilled asparagus and bell pepper. Flavor and fiber are always in abundance in our house & on our plates. 🙂IMG_7069IMG_7071(1)
