Did you know today is Vegan Baking Day? I was originally supposed to share this recipe after we moved but once I heard about today’s “holiday” I couldn’t pass it up! Today I’m sharing my super easy & delicious vegan chickpea chocolate chip cookie recipe.Untitled design(48)

Chocolate chip cookies give me all the feels of the innocence of my childhood years. Hop scotch on the playground, double Dutch, red light green light, remember those games? My mom always made sure we had a sweet treat in our lunchboxes. Soft chocolate chip cookies were my fave! My older sister and I used to take our cookies, add vanilla ice cream to make ice cream sandwiches.

Ignorance is bliss. We had no idea how many toxic chemicals and preservatives were in our beloved cookies and snacks overall. Now that I’m a holistic nutritionist & conscious recipe creator, I’ve really taken the time to seek out clean, nutritious & health beneficial ingredients for many classic childhood faves.

Why chickpeas?

Chickpeas are rich in vitamins and minerals. Magnesium, b-6, iron, zinc, copper, choline are just a few of the vitamins and minerals you’ll find in chickpeas at exceptional levels. They are also a significant plant-based source of both protein and fiber.Untitled design(45)Untitled design(31)

Naturally Sweetened

I opted to sweeten my batch naturally with Medjool dates. Dates come in many versions but Medjool are much softer, bigger and sweeter. They’re also super moist and “meaty” on the inside making them the perfect alternative natural sweetener for recipes.Untitled design(43)

Medjool dates contain more potassium than bananas. Additionally, Medjool dates provide 27% of the RDV for dietary fiber. It’s no wonder they also help to prevent and relieve constipation. Remember, a high fiber intake has been attributed to the removal & prevention of plaque build up in arteries. This very build-up is the leading cause of stroke & heart attack. In fact, studies have shown that Medjool dates can lower cholesterol, stabilize blood pressure, boost bone health, increase energy levels and lower risk of certain cancers such as colon cancer.Untitled design(46).pngUntitled design(46)

These naturally sweetened, fiber & protein packed cookies are my favorite recipe to date. They are also allergy friendly as they are nut free, gluten free and soy free! As long as you have a decent food processor you can make these vegan chickpea chocolate chip cookies hassle free. I’ve tested them on multiple clients, family members, kids and toddlers.     can substitute chickpeas with chickpea flour?

      Hey! I’m not too sure only because my recipe already calls for brown rice flour. I would imagine it would not come out as planned.
